Black garlic is produced by fermentation, a Japanese technique that has been around for thousands of years.  

Garlic contains sugars and amino acids. When garlic undergoes fermentation, these elements produce melanoidin, a dark-colored substance that is responsible for the color of black garlic.

The real magic happens during our carefully controlled process, developed over many years to optimize the flavor and texture of fermented garlic. This process starts with great garlic and ends with great black garlic.

Black garlic is a versatile ingredient that can add a deep, umami-rich flavor to various dishes. Here are a few ways to cook with black garlic, along with some recipe ideas:

1. Black Garlic Aioli

Ingredients:

  • 4-5 cloves of black garlic
  • 1 cup mayonnaise
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions:

  1. Mash the black garlic cloves into a paste.
  2. Mix the black garlic paste with mayonnaise, lemon juice, salt, and pepper.
  3. Use as a dip or spread for sandwiches.

2. Black Garlic and Mushroom Risotto

Ingredients:

  • 1 cup Arborio rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 5-6 cloves black garlic, chopped
  • 1 cup sliced mushrooms
  • 4 cups vegetable or chicken broth
  • 1/2 cup white wine
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter
  • Olive oil
